Alpha-Getti al Fungi Recipe

A few years back I was fly fishing on Lac Mistassini and was reminded of a time I was fly fishing at Réserve Faunique Papineau Labelle. At the time, I hadn’t gone fishing more than once or twice; even as a child my father didn’t take me fishing much because he felt my efforts would be better focused hunting the forest for kindling or setting up the perfect circle of mosquito coils back at our campsite (for those who don’t know, the perfect circle is one coil every 2 feet, in an ever increasing arc using the golden spiral moving outward from the epicenter of the campsite. Don’t believe me? Try it!). So my experience with catching fish was minimal; I’d mostly be treated to tales of the great lunkers that got away. As a wee one I’d listen in on such stories in amazement, but in my teenage years I remember rolling my eyes, challenging Dad for proof of these lunkers. “Pics or it didn’t happen!” I’d say, and because these were the years before digital cameras, it didn’t really make a lot of sense.

The Best Alpha-Getti al Funghi

You may have fond memories of Alpha-Getti, but what if you're tired of the tomato sauce? A quick drain and rinse, and an addition of mushroom soup, and you'll be enjoying an easy twist on one of my all-time favorite canned meals.

Ingredients

Instructions

  1. Open the can of Alpha-Getti and empty into a colander or strainer. Drain and rinse the pasta with warm water, and set aside.

  2. Open the can of mushroom soup and spoon out about a quarter of the soup into a small saucepan.

  3. Add an equivalent amount of water to the soup, and heat it up over medium heat, stirring until creamy and smooth.

  4. Add the drained pasta to the pot and stir until mixed with the sauce.

  5. Remove from heat and serve in a soup bowl. Add a dash of salt and pepper to taste. Enjoy!

Note

  • Let the pasta drain completely.
  • Cook this recipe at low or medium heat.
  • Use low sodium mushroom soup - for your health!
  • Don't use the microwave - it's time to be a real cook in your own home!
